Saturday night is curry night right? This was crammed with tons of veg and was soooo tasty.
It makes a huge portion that can serve 4 or 2 very hungry people.
Chicken (turkey breast or steak also works well)
Coconut oil (or oil for cooking)
1 red onion diced.
8 Sliced mushrooms
2 table spoons of curry powder (mild – hot depending on your taste)
2 pak choi chopped
1 large sweet potato chopped
(You can also add peppers, ribbons of carrot and a bag of spinach for an extra hit of veg!)
Add a teaspoon of coconut oil to a hot frying pan and brown the chicken/meat.
Put the chopped sweet potato in the microwave to cook for about 5 minutes.
After a few minutes add the onion and mushrooms and lightly fry for another few minutes.
Add the tinned tomatoes, curry powder, broccoli, pak choi, cooked sweet potato and any other vegetables, 2 tablespoons of greek yoghurt and cook for another few minutes.
Serve up with a spoon of greek yoghurt and you’re done!
You can also serve it with some brown rice and any that’s left over freezes really well.
