This was seriously one of the quickest dinners I’ve ever made but it was also a big winner on the taste front – you have to try this one guys!
Steak bashed really thin (I sandwich it between some cling wrap and bash it to about 0.5cm thick with a rolling pin so it cooks really quickly). I thought I’d ordered a bigger pack of steak on my online shop but ended up with a 300g pack between two of us so I’d definitely up this next time.
Microwave basmati rice. I used a pouch of Tilda.
Fresh chopped coriander
Chopped chilli and garlic – I use frozen pre chopped which costs about the same and keeps really well.
Frozen edamame beans – microwaved for 2 minutes. (They’re really high in protein).
Blue Dragon reduced sugar sweet chilli sauce.
Fry your steak for a couple of minutes on each side.
While that’s cooking microwave the rice and edamame beans. Once done, combine the rice and beans with the chopped coriander, squeeze in the juice from the lime, stir and serve.
Slice the steak and arrange on top.
Squeeze a little sweet chilli sauce over the top and more chopped coriander and you have one quick tasty dinner right there!
I had a whole pack of rice to myself as I had just trained and was on a high carbs day which made it around 600 cals, 67g carbs, 48.5g protein and 13g fat. If you’re not fancying quite so many carbs and a lower calorie option you could do twice the amount of steak, half a pack of rice and add some steamed broccoli.
