This looks impressive but seriously only takes around 15 minutes and is such a quick tasty dinner. Inspired and adapted from #leanin15 using haddock.
Coconut oil (for cooking, although olive oil will do).
Haddock (Cod, seabass, salmon or most other fish fillets would work).
Tinned chopped tomatoes
8 Sliced mushrooms
Broccoli cut into small florets
Garlic (I use frozen chopped garlic from Waitrose).
Chilli (I use frozen chopped chilli from Waitrose).
Put your grill on to heat up.
Add a teaspoon of coconut oil to a hot frying pan and lightly fry the onion, mushrooms, garlic and chilli.
After a few minutes tip in the tinned tomatoes.
Place the broccoli with a little water in a microwaveable dish, cover with cling film and microwave for 4 minutes.
Add your fish into the frying pan, cover with the tomato sauce and cook for around 5 minutes.
Drain and add your broccoli to the frying pan.
Crumble over the feta and pop under the grill until it melts.
Check your fish is cooked (it should flake easily), serve up and you’re done!
