This is such a quick easy dinner for after work, post gym or mid-week when you’re flying around and don’t have much time. It’s also tasty, low carb and full of healthy fats and protein. Inspired by The Body Coach’s #Leanin15
Coconut oil (for cooking, although olive oil will do).
Lambs lettuce (watercress, rocket or any other leaf would work too)
Your favourite spices/seasoning e.g. chilli flakes, peri peri, curry paste, garlic)
Add a teaspoon of coconut oil to a hot pan and lightly fry the salmon.
Sprinkle with seasoning.
Empty the lambs lettuce onto a plate
Chop cucumber, tomatoes, spring onion and avocado and scatter over the lettuce.
Turn your salmon over and cook for a few more minutes.
Drizzle salad with a little olive oil and vinegar.
Serve up the salmon and you’re done!
