This is one of my favourite breakfasts! It’s quick, easy and gives me a mix of healthy fat, protein and energy to start the day. Beats a cereal bar at my desk and keeps me going until lunch.
Brown bread (wholegrain)
Half an avocado
A little butter or olive oil
Salt and Pepper
Fill a saucepan with boiling water and poach 2 eggs.
I use these Poach Pods, I found that you can put two eggs in one pod and they take around 5-6 minutes on a low simmer.
Put your bread in the toaster.
While that’s toasting, chop half an avocado into slices and place on a plate.
Once your toast pops up, put it on a plate, drizzle with a little olive oil or butter if you prefer, top with your eggs and you’re done!
